Ladies I need sausage help !!

Afternoon all,

Long time lurker and laugh out loud reader !!

After a bad week with my Dad dying and trying to keep busy til the funeral next week I have been doing some deep cleaning . .this is rarity for me . . !!. However back to my question . . ??

I have a seelction of visitors arriving over the weekend from far and wide . . As I live alone I have some very random 'spares' and 'leftovers' discovered in the freezer today mostly from Y/s packs of sausages ie buy 6 cheap, eat 3 put 3 in the freezer etc . . Sure you can see where this is going !!

I have found about 14 'various' sausages, none in pkts all in bags, but pretty sure they are pork in origin with variations such as leek, onion, sundried toms, chirizo and more !!

Could I chuck (carefully place:rotfl:)all these in a cassarole and what else to help get them to meld together . .

PS I kna*ked my oven home making my Chrismas cake so would need to cooked on the hob . .

Any ideas for an easy but tasty lunch

    Probably easiest is sausage and bean casserole. How you do the bean bit is upto you, but the easiest is to use baked beans. First, chop some potatoes into cubes and fry (since you don't have an oven atm) in a little oil, until browned all over. They don't have to be cooked all the way through. Add chopped onion and fry until soft and just browning. Remove from pan. Put in sliced sausages, and brown, then add potatoes and onions and a large can of baked beans - you may decide you need to change pans at this stage. Warm through, then add seasoning and/or herbs to taste. Give it a good stir, then put on lid. Keep heat low, and stir occasionally to prevent it sticking. When sausages and potatoes are cooked through, there you have it! We usually finish this off in the oven, but there's no reason why it shouldn't be done on the hob, providing the individual ingredients are browned first.

    Another one that would work well with all the sausage varieties you mention is what I can 'Spanish sausage casserole' (I can't remember why now ;)) - brown the sausages (they don't need to be cooked through) and cut them into chunks, then cook chopped onions in the same pan. Add a couple of tins of tomatoes, then put the chopped sausages back in the pan with a pinch of chilli flakes / splash of chilli sauce (more if you and your guests like spicy food), and some tinned beans / frozen peas / green veg (cabbage / spinach / whatever) and simmer until everything's cooked through. Serve with mash, pasta or crusty bread.

    I usually cook this on the hob so I know it works - you just need to keep an eye on it and add some water if the sauce starts getting too thick as otherwise it will stick to the bottom of the pan and burn. :(

    both sound yum and may suffice for many of the different tastes people like . .just thinking .. mash, cous-cous, polenta or some good old crusty bread ??

    Personally I'd go with crusty bread with both, but then I'd happily eat the bread on its own even without a nice sausages casserole to accompany it. You probably wouldn't want mash with the sausage and bean casserole as that has potatoes in it anyway - it might be a bit of potato overkill ;) - but otherwise I'd just go with whatever you fancy.

  • Sorry to hear about your Dad.

    It sounds like you've got LOTS of sausages (!) but if you need to make them go further, it works well if you mix cooked sausage with cooked pasta shapes and plenty of tomato and onion sauce (made with tinned tomatoes). You can add soy or Worcester sauce or even vinegar, and mixed herbs, sage, or anything like that. I usually add a small amount (half a teaspoon) of sugar as well as salt and pepper.

    Good old crusty bread cant beat it.

    Jeeze my kitchen has never been so clean !! My family are Irish so will dish up bread and potatoes . . like having 2 veg for us !!

    I'd brown off the sausages in a pan with some chopped onion, then put them (chopped) in a large pot with tins of chopped tomatoes, garlic and some herbs. Let it simmer away. Perfect served with either rice, bread, potatoes or anything really.

    A recipe that I saw Ainsley H do a few years ago and that I still do regularly. My family love it.
    Serves 4
    Brown 6 sausages in a little oil. Remove from the pan and chop.
    Add 1lb cubed potatoes and 2-3 sliced carrots to the pan and fry gently for 2-3 minutes. Return sausages to the pan, add 1 tin baked beans, half a pint of chicken stock and a splash of worcester sauce. Simmer for about 20 minutes until the potatoes and carrots are cooked. Serve with crusty bread - delicious!

    No further suggestions for you because the above all seem to be very do-able hob based ideas. Only one thing I would add .... how did your Dad like his sausages? You could perhaps combine how he liked his with a variation from above and make it a commemorative meal? So, if he liked say sausages, mash and beans, do the sausage and bean casserole idea; if he liked sausages with colcannon (sp?) perhaps that would be a better route? Just a thought. Simply don't stress over it and if all else fails ... cook your sausages and grab a huge bag of chips from the chippy ;)
