I have some eating apples and a sheet of puff pastry that have to be used.
I was thinking about making a apple crumble pie - there isnt enough pastry to make a top and bottom but I have a bag of frozen crumble topping in the fridge.
Does anyone know
1. If puff will make an ok bottom
2. If I can cook eating apples?
3. If a crumble pie will be ok?

I always use eating apples for cooking. They might not hold their shape as well as a cooking apple, but they're otherwise fine. And I've used puff for pie bases before, also without any issues.
As for crumble pie, I've never had it but this one looks delicious!0 -
You could try making it like a 'Tarte tatin'- eating apples will work fine, infact this recipe from Jamie Oliver uses cooking apples

Yes, yes and yes, prod the puff pastry with a fork to stop it puffing if baking blind first. Sounds yummy!0

You can make tarte tatin in any old baking tin or flan dish, it doesn't have to be a frying pan!0
