Anyone got any good weight watchers friendly vegetarian recipes? Want to c,ook from scratch to save money

I'm a weightwatcher as well (getting back on the bandwagon on Thursday) and I might think of some more but a couple come to mind. The amount of ingrediants to use will depend on how many you are cooking for - I tend to just estimate things rather than weighing them (I will weigh when back on track but not sure of weights atm)
Quorn Fillet Parcel (1 point)
This is one of the easiest and most flexible dishes I know how to make - perfect after a long day when you don't feel like cooking!
On a piece of kitchen foil add a Quorn chicken fillet (1 point) and vegetables of your choice (I tend to add onions, mushrooms and chopped peppers - everything except peas and sweetcorn is 0 points. Sometimes I'll add half a tin of butterbeans for 2 points.)
Add half a tin of tomatoes and some chillies (and herbs or spices to taste)
Seal it up and pop it in the oven for about 45 minutes, checking it every so often
Serve it either with a side dish (potatoes, rice and pasta will all go well) or by itself if you need something very low point!
Cous Cous Stuffed Peppers (7 points)
Depending on how many points you have you can alter this to include quorn mince or melted cheese on top or other vegetables
Heat some sunflower oil in a saucepan (1 tsp = 1 point) and fry an onion, some mushrooms and garlic until browned
Add on some spices or herbs to taste and fry for a minute
Add a tin of tomatoes and simmer for five minutes, adding water if needed
Add dried cous cous and cook for a few minutes until it fluffs up and most of the liquid is soaked up OR pre-soak it if necessary, follow whatever the packet says - I just toss mine in to save effort (ww e-source says a medium serving is 60g = 6 points but this can always be increased or decreased)
Chop the tops off some bell peppers and scoop out the insides, put the cous cous and veg mixture inside and pop it in the oven until the skins of the peppers soften and it is all cooked through

This is from one of the older books - so I don't know how it translates to the newer point system. But it is vegetarian, very tasty and pretty healthy. I love it and often have it in the freezer.
