Pigs in Blankets

Hi all and Merry Christmas! :xmastree:

I'm making pigs in blankets for the first time on Christmas day. I have some pre-cooked cocktail sausages in the fridge which say to put them in the oven for 6-8 minutes at 180c/150c fan (obviously just to warm them up). If I wrap bacon around them will they cook in the same time or will I need to increase the cooking time?

    I think if the sausages are already cooked, rather than putting them into the oven wrapped in bacon, Id pan fry them. Im not sure the bacon would cook enough in the oven in 6-8 mins, if you leave it in longer you might dry out the sausage too much, but if you pan fry them the sausages would warm up nicely and your bacon would crisp too, hope this helps :)
  • yes would echo what Bexstars says, if they were raw sausages and raw bacon you could just increase the sausage cooking time by about 10 mins, but if the sausages are part cooked and the bacon raw i would be careful with the cooking and frying would make sure that the heat was mainly applied to the outside i.e the bacon and reduced when reaching the sausage which is part cooked anyway. enjoy!

    Stretch the bacon to make it thinner and wrap around more rather than one thick layer. One rasher of streaky will do 2 sausages.

    I'll let others advise on cooking time etc as I am of the 'bung them in and take out when cooked' variety. I normally cook in advance and stick back in for 5 - 10 mins to reheat.

    The best piece of advice I can give is to cook a LOT more than you think you will need. PIB's are subject to stringent quality control by every member of the household who appear miraculously to advise on taste and aesthetics. I'm sure even if I cooked them at 3am they would all appear from their beds. Rejects are consumed on the spot. Make at least 4 times what you want for the main dinner (or is that just my house :o).

    There will only be 3 of us for Xmas dinner. I've done about 40 :D

  • That's great, thanks for the advice! I'm glad I asked, my hubby wouldn't be very happy if I spoilt them for him lol. I shall pan fry them :) Merry Christmas!

  • I just wanted to say thanks for the help with the pigs in blankets :j I instructed my hubby as above and he actually cooked them! They turned out lovely and were a great addition to our christmas dinner. Hope you are all having a great time :)
