in Gone off!
I have noticed that nearly all jars of olives contain the instruction to consume within two weeks of opening, Since when have olives covered in brine gone off that quickly?
Any suggestions as to how long realistically they can be stored?

Sorry, can't answer your question.
Olives in brine will keep for absolutely ages in the fridge, if you pour a little olive oil in the jar after opening. Don't worry about the olive oil solidifying in the fridge, it's perfectly safe.0 -
Personally? I'd eat until they go mouldy or taste off....0

If the olives are exposed to air, even within the jar, they can go mouldy. This happens to pesto too, so the trick for both is to keep submerged. I buy olives in olive oil and add more, also scrape sides of pesto jar down into it and add teeny bit olive oil.0

I keep them in the fridge but do notice them deteriorating as the weeks pass. As a result, I try to use them up within 4-6 weeks.0
