    Can I ask a related Turkey crown cooking question?
    Do you need to put oil or fat on it to stop it burning/drying out? Turkeys aren't very fatty are they so I thought you would, but no one has mentioned it.
    I'm a turkey cooking virgin and I have no idea how it all works :o

    I will shove some herby butter between the skin and flesh before cooking mine. If it were bigger then I would also wrap it in streaky bacon. It all depends on the size. Last thing you want is over cooked, dry turkey breast. Mine will see the oven for a max 40 mins, hopefully nearer 30 mins.

    If I cook a whole turkey it's never in the oven longer than two hours.

    Turkey breast can be dry - no matter if just a crown or a full bird, free range organic - whatever

    This is how I cook my bird or crown

    Remove from fridge as early as possible to get as close to rrom temp as possible

    Then remove rings and scrub up :)

    Lift the flap if loose skin and slide your fingers in between that and the breast, loosening the skin, but keeping in attached

    The get some good thick slices of cold butter and slide them up in the pouches made

    Massage it in, mould it around the breasts

    The streaky bacon across the breasts ( and thighs if a full bird, might need extra foil here)

    Then cook per instructions

    I usually do 20 mins a pound and 20 over then rest on the breast bone wrapped in foil and a tea towel for an hour or so. But always cook till juices run clear when pierced at the thickest point ( a leg on a full bird)

    Turning it upside down to rest ensures all that buttery goodness stays in the breast and isnt wasted when carving

    Hi
    I always lather my turkey with butter & then streaky bacon over that and cook in a tent of foil. Take the foil off for the last half hour.
    Thats how Delia does it & works for me.
    I'd also recommend getting a meat thermometer. They cost about a fiver & take the guess work out of is it cooked or not !

    To the person who asked about a stuffed, boneless, rolled turkey crown:

    We have just collected our turkey as above, it's an Adlington. The instructions are very good. It says to pre-heat the oven, cook on 180 (fan), 190 or mark 5 for 50 minutes per kilo, loosely covered with foil. Remove foil for last 30 mins. Take away from any source of heat, recover and rest for 20-30 minutes. Hey presto! The box also includes a pop up thing which will tell us when it's cooked.
