Sultana cake recipe?

Hi

I have searched the index thread but there is nothing under eitehr sultana or fruit cake? (:eek:) I have a glut of sultanas in my cupboard, already made eccles cakes this afternoon, quite fancy doing a sultana cake now, anyone got a treid & tested recipe please?

    The recipe I use is one my Mum told me.

    8oz SR flour
    4oz marg
    4oz sugar
    4oz sultanas
    1 egg
    milk to mix

    Cook in lined loaf tin or make into fairy cakes. If in loaf tin it will take about 40 minutes or so to cook (190C) and will be done when knife/skewer comes out clean (cover top with cardboard if it starts to brown too much). Fairy cake size will take about 20 minutes.

    You can use 2 eggs and less milk if you like.

    I don't have any grease proof paper, would it be OK in a well oiled non-stick cake tin do you think?

    hi Lillibet, i make a sultana tea loaf, my 3 and hubby love it, especially spread with butter
    8-10oz sultanas
    8-10oz sr flour
    4 oz sugar
    1 egg

    Method - soak sultanas in 1 mug hot black strong tea, leave overnight, if not a couple of hours, sultanas really swell, then mix in an egg, pinch of salt, then add the sr flour, mix then put into a loaf tin, i use a silicone one, absolutely brill cook on gas mark 4 think that 180 for about an hour, i use a knitting needle to test it, once cold slice and spread with butter, my children take it for snack at school. best wishes nik

    I do a similar recipe but add a bit of powdered ginger - I think it was originally a recipe from the Jimmy Young show on Radio 2 about a million yeras ago. I used to make one a week as OH loved it with a bit of butter. In fact I think I'll just go and make him one now ! Thanks for reminding me..:beer:
