An alternative to sandwiches is mini wraps - use tortilla wraps, you get 8 or 10 to a packet. Lay one out on a board and spread the filling over - A good one for kids is finely grated cheese mixed with coleslaw and finely chopped tomato. Roll the wrap up tightly into a long sausage shape, wrap in clingfilm and chill - overnight is best and that means there'll be less work to do on the day. Unroll the wrap, cut into small pieces at an angle and arrange on a plate.
