Help! Catering ideas needed for a Baptism reception at home

    Can't believe your butcher is charging people per slice. That's outrageous. I did a really good deal with mine. Mind you, I did tell him I'd been to speak to other butchers in teh area ...

  • Thanks again for your help. We have already thought of having the catering done at the station but is has been contracted out and is ridiculously expensive as they like to do silver service. Bring back the good old days when things were at cost price...

    I had thought of beans with the jackets but I couldn't keep them hot.

    I think I may try and make quiches and pies and freeze them.

    But first I think I need to sit down with a proper menu and work out just what I am going to try and cook so I can work out what the cooking plan might be.

    Any ideas how you work out portion sizes? How many pies and quiches etc for 50 people. How many bottles of wine or would I be better off buying a box of white and a box of red? and a few bottles of beer?

    All ideas greatly appreciated

  • I don't know if this was suggested for the beef but buy a brisket of beef slowly cook it a day or two before slice it then on the day make a load of gravy up put it in a deep oven tray then put the slices of beef into it to warm through this is lovely in a soft batch. you can also do this with pork and make up a load of stuffing mmmm pork and stuffing batches now Im hungry......
