Hi, some years ago I was lucky enough to see a food buyers bible. A book that cost a fortune and was purely for reference for big buyers of food for retail and catering chains, Among the most interesting things was loads of stage by stage pictures of decay of food so that by eye a buyer could tell exactly how old food was before they bought. One thing I always remember too was the section on rice buying. It said that although there were several causes the most significant cause of broken rice was rodent nibbling. Needless to say I have never bought it since.

surely if this is the main cause of the rice being 'broken' they would not be allwed to sell it for human consumption?

  • Many years ago I worked for a haulage co. where they used to store bags of pasta for a local (large) food processing unit. Every couple of weeks, the yard guys and drivers would grab shovels, spades, bits of wood, etc., and batter all the rodents that had made their nests in the bags! I think they even had a sweepstake on the outcome. if you've ever seen those videos of mice in Australian wheat - you get the picture. I still eat pasta though.

i use broken rice to make rice dumplings for meat curries. Never cooked with them though for pure rice dishes. cant see how it would be different, it would just not look as pretty maybe as long grain rice?
You'll have to speak up; I'm wearing a towel
  • Tesco's ordinary basmati is rubbish so goodness knows what the broken stuff would be like. Think feeding it to the chickens seems like the best use for it.
