Blackcurrant Curd

I have just made blackcurrant curd and it's delicious and very easy.
300g blackcurrants
125ml water
275-300g sugar
70g unsalted butter
3eggs
1 egg yolk eggs beaten together
Cook blackcurrants with water for 10 mins until soft, strain through sieve. Add puree to a double sauce pan or bowl over saucepan with water in, add sugar to puree and butter so it melts remove from heat and cool slightly add eggs and keep stiring, return to heat till thick.
Hope this makes sense lol. Yummy alturnative to a lemon or lime curd.

I don't like blackcurrants, but I have loads of redcurrants in the freezer. I'll have a go at redcurrant curd. Thank you very much for posting the recipe.0

I tasted redcurrant vodka not long ago and that was sooo delicious...0

I think it would work with any berries I would say it would keep for 3 weeks in fridge the recipe only makes about 2 jars. Might have to try blackberry curd next x0
