    Oooh thanks for all the ideas, I have lots to try, like the sausages receipe and the warm salad style, think I might need to buy some more to use them up trying all these lovely receipes!

    For all those people who say they put it in shepherds pie etc, do you put them dried or do you have to cook them first. Also, do you have to do anything to "prepare" the lentils when normally cooking the, eg soaking first?
  • Puy Lentils are a weakness of mine.
    Add Sausages, Bacon, nicely cooked Belly of Pork to the above cooked in unsalted water with bay leaf, onion, carrot to add flavour until tender.
    One could also include Roast Chicken Thighs, Chicken, Leftover Roast Chicken.
    For Veggies add Mushrooms, curl around a soft boiled hard cheffy egg for the first part of Scotch Eggs.

    When in Paris a couple of weeks ago I had a starter of Puy lentils with smoked salmon. It was absolutely delicious and would love to reproduce it, but don't know what else I might need to add.

    Any ideas? It was served in a ring mold and held together until cut into so presumably something was binding it.

    THey are lovely cooked with green beans and served with sausages. We had them once like that in Puy en Velay - where they come from.
