Fail safe recipe for american style pancakes needed please :)

Hi,

My two love these but I would much rather make them myself (cheaper and healthier). I have tried a couple of recipes off the internet but neither were very good. Does anyone have an easy recipe for them?

    This is mine...

    1 cup (125g) self raising flour (or 1 cup plain + 1 tsp baking powder)
    1 cup (250ml) milk
    1 egg
    2 tb melted butter
    2 tb sugar
    Pinch salt (I forget this half the time)

    Mix all ingredients together with a fork or whisk to form a smooth batter - a few lumps is fine if you can't get it smooth. I do this in a large jug as it's easier to pour the batter directly into the pan. Cook in a buttered pan over medium heat until bubbles form on the surface and the underside is golden brown. Flip and cook other side until the pancake puffs up and other side is brown.

    Makes about 6 large (close to 20cm) pancakes. Or loads of little ones, which are yummy with jam.

    ETA: Turns out my recipe is almost the same as the above. So I can second they are delicious. :D

    DH's American pancakes are legend! His recipe is as above but using 2 eggs, separated; add yolks to dry ingredients, whisk whites and fold into the mixture. You will probably need less milk.
  • Fantastic, will try in the morning :) My youngest isn't exactly a morning person and I battle every morning to get her to eat something (she is 8 and very slight). Pancakes are the only thing she never refuses! Thank you so much xx
