I want to make mary berry's american light xmas cake from the mail on sunday's you magazine.
however, it uses 350g of dried apricots and OH really hates apricots. i cant eat a whole cake to myself even if it is xmas
so i need to substitute the apricots for another dried fruit.
what do you think would go best with almonds, pineapple, sultanas, lemon and glace cherries (the cakes other 'fruits') ?

Does your husband like mango? You can buy dried mango if he does. Papaya is another option, as you have the tropical fruit with the pineapple in there. I imagine dates would work quite well too.Enjoy the little things, for one day you may look back and realize they were the big things.I married Moon 8/4/2011, baby boy born 26/9/2012, Angel Baby Poppy born 8/11/15, Rainbow baby boy born 11/2/20170

Hi raphanius,
I would also go with figs because I love them, but alternatively peaches, nectarines or even plums would be great. Basically any dried fruit that you both like will be fine.

dates may also be a good alternative - but I would just increase the other dried fruits proportionately - ie if recipe states 150gm of sultanas, use 200 gm, 100gm of currants, use 150gm until you have made up the wieght of the apricots.0

Hi,
I was going to say dates as well. I've added them to mine. Just used scissors to chop them up abit smaller.

I'd go with dates or papaya. There is never any need for dried apricots, they're the devil's own dried fruit (and not in the good way)0
