Undercooked pork - help!

I cooked a shoulder of pork this morning, juices ran clear and it seemed ok so I left it to cool on the bench. Went upstairs for couple of hours and when I came back downstairs to start making lunch, there was blood on the plate underneath the joint.

Managed to get enough meat from the outside for lunch, but loads left and not cooked inside - can I salvage it at all, maybe boil for soup? :undecided:question:

Chop it up & make a pork & apple casserole?

Slice it & cover with pork gravy & heat in the oven for an hour or so?

    Pork stroganoff?

    Sweet & sour pork?

Dont think of it as being half cooked, make casseroles etc and treat it as if it hasnt been cooked at all.

    Enjoy
make the most of it, we are only here for the weekend.
and we will never, ever return.
  • Thanks, guys - I wasn't sure whether I could use it or not - will give it a go!

The warnings about making sure pork is well cooked go all the way back to the days when you could pick up tapeworm from eating undercooked pork. No pork you buy will give you tapeworm these days - it's not like salmonella in chicken, they have been able to eradicate it from pig production with worming tablets.

So relax and chop it up and use in in something like fajitas
It doesn't matter if you are a glass half full or half empty sort of person. Keep it topped up! Cheers!

I too would treat is as uncooked. but, I would make sure that any dish I made from it cooked it at high heat. stir fry would be ideal or cooked in a casserole (but not slow cooked) where it could be brought to a boil early on.
  • Happened to me a couple of weeks ago. I just cut slices from the edge for my roast and then diced the rest up and made risotto. Was perfectly fine.
