    quiche does freeze but I'm not a fan of cold quiche - however other people might be. I think you shoudl ditch the falafels if its doing to be cold too - concentrate of food that shoudl be cold

    How about a veg terrine than can be served in slices - this would freeze

    or a cold nut roast that will be almost like a pate served cold cashew and mushroom or I had a christams nut roast that was made with brazils and chestnuts that was lovely cold.

    i always make mini cheese and caramelized onion tarts, and i always get asked to make them again and again and they can be cooked and frozen or made up, frozen and then cooked like mince pies.

    I do not really have a recipe as such as i have just adapted it over the last couple of years, but generally i use a few onions (if you want to make loads then i would suggest A LOT of onion!) and sweat them down for about an hour with a couple of tsp's of suger, pinch of salt and a good pinch of cracked black pepper. The longer you can cook the onions for the better, just don't burn them, you want them to be golden and full of juice from the cooking process.

    Make little tarts using shortcrust pastry, and layer some of the onion mix in, then sprinkle a layer of cheese, then a layer of onion and then a layer of cheese to finish.

    Mix a couple of eggs and some milk and pour that over the tarts until they are filled, or slightly under as they puff up just a little. Bake for 10-15 mins until golden and set in the middle. :D
