Made perfect honeycomb- by ignoring Delia!

I see honeycomb pop up on here sometimes and gave it a go, following Delia instructions and YouTube vid to a T, looked exactly like it was meant to but ended up in the bin! I had another go following comments on a forum. Delia uses 4 table spoons of golden syrup, 200g of caster sugar and 1.5 teaspoons of baking powder but people rarely get it to set. I reduced the golden syrup to 2 and half table spoons and covered the tin in clingfilm and put in the fridge. It's perfect, so much so my dads asked me never to make it again as he can't stop eating it!

Ooh, I will give that a go this week, last time I made it I had to sling it out too!0

It's all to do with the amount of water left in the mixture at the time you add the bicarbonate. The more golden syrup, the longer it will need to boil to achieve the right level of water to set so my guess is that you didn't boil it long enough or high enough on the first attempt. Another common mistake is leaving it to set too long - if you leave it out it will go soft again really quickly.
I use Nigella's recipe and it's never failed yet! I always dip it in chocolate and let it set - somehow the chocolate stops it from sticking to your teeth too much.
