What to do with all these tins?

I've ended up with a couple of tins of green lentils, 4 of kidney beans and one of chick peas, a tin of coconut milk and a little jar of tamarind paste. Any ideas on how to use these up as they've been sitting in my cupboard for months (in fact, I think I inherited most of them from my mum who had a clear out at the start of the summer!).

    posh green lentil salad: cold lentils, chopped olives, mixed leaves, crumbled feta and olive oil. sounds pricey but you can get all these ingredients quite cheap and it makes a delicious salad with plain pasta.
    chickpea curry and coconut rice: http://www.holycowvegan.net/2009/04/thai-curried-chickpeas-with-coconut.html i want to make this for dinner now, it looks so tasty.
    tamarind goes well in curries, you could possibly add it to the chickpea curry.
    use the kidney beans in rice and peas or jamaican rice and peas which uses coconut milk. you will most likely have all the other ingredients in anyway- rice, garlic and onions.
    or turn the kidney beans into a bean dip or rough refried beans- fry 1 med onion and 2 cloves garlic in lard, add tin beans, fry for a few minutes then mash while still frying over the heat. add some cumin and chilli when frying the onion if you have any.

    these are some of my favourite foods and now i am very hungry and need jamaican rice and peas for lunch!!

    Thanks. I think I'll try everything except the lentil salad (OH doesn't like cheese - or salad for that matter :D).

    Lentil curry or lentil curry soup..hubby loves that and it is so simple to make :

    Onion chopped however you like it
    Garlic
    Chili
    Lentils
    Curry spices
    Tin toms
    Coconut milk
    water
    Tamarind


    Job done but you can of course add more or less..I like mango chutney and lemon but it can cope with most things



    Kidney bean chili con carne
    onion
    Garlic
    kidney beans
    tin toms
    Spices and herbs
    red wine vinegar or any to be honest
    brown sugar or dark chocolate or maple syrup
    touch of whisky, bourbon or wine
    leave to simmer and serve with rice or jacked spud

    Chickpea curry as the lentil one or use in soup or make hummus.

  • The kidney beans can be added to spag bol, lasagne (or google Nigella's Mexican lasagne for a different twist!), chilli, salads, you can make dips or burgers with them.

    The chickpeas can be used to make hummus or added to salads.

    Both could be added to a soup to bulk it out, same for lentils.

    My mum makes 'lentil slop' which is onion, garlic, celery, carrots cooked off and add the lentil tin, then serve over mash.
