If you got a job that was 6 mth maternity cover could this job end sooner and if so would they have to give you any notice?

Also if the woman wasn't coming back after 6 mths what notice would she have to give her company?

Nobody can answer these questions apart from your potential employer. Worst case scenario is yes, they could give you a week's notice if the woman you were covering for decided to come back early. She would probably have to give the employer more notice than that, but they don't have to give you more.

The woman is presumed to be taking the full 52 weeks of maternity leave unless she notifies the employer otherwise giving 8 weeks notice that she wishes to return earlier. Of course that doesn't mean that the employer has to let you know and can just give you the normal notice when they like.

The maternity cover would have contractual terms and conditions attached (if different to statutory) and these would detail the notice period in the event that the contract ended earlier than the 6 months. If there was no contractual notice period then statutory notice (one week) would apply. Employee on mat leave needs to give 8 weeks notice if she wants to change her return date but as someone else has said, this does not mean you'd be entitled to this period of notice.
