making rollmop herrings

Hi Guys,
Anyone make rollmop herrings? I have a bagful of herring coming - used to make these following the John Seymour recipe, but cannot recall whether I heated the pickling mixture or not prior to adding the herring? I don't think I did, once I found pickling vinegar with the spices already added.
Would love any advice,

I love these. I dont know if this is correct but my mother used to roll them up with a bit of sliced onion tucked inside and secure with a cocktail stick. then cover with water and vinegar 50/50 add a cople of bay leaves and a few pepper corns then bake in the oven for about 20mins0
