Storing/Freezing Veggies

Not sure if this is the right forum...

Anyway I seem to have a glut of veg from my two whoopsie adventures. Can anyone suggest a way to store/ cook up the following?

Carrots, swede, sweet potato, broccoli.

    I think if you search in the old style forum, there is a thread all about freezing different vegetables!

    You should be able to either blanch them first or just freeze them. Not sure about the sweet potato though.

    Swede lasts ages in the bottem of your fridge. Carrots can be frozen, blanch for 1 min then open freeze (ie freeze on a tray or plate-this stops them sticking together) then bag up. Broccolii freezes easily too.

    Hi,

    The carrots, swede and broc can all be cut up into pieces, either sticks as I prefer or slices, pieces for the broc.

    Then I just pop in a freezer/food bag and put them in the freezer.

    Then just cook however much you need from frozen, in either a pan of water or microwave, however you normally do.

    You can blanch as previously said but I don't bother now, its up to you really.

    Can't help with sweet potato as we never have it.
  • As a veggie myself, I was a bit worried by the title of this thread:eek: but then I read on :).
  • I would roast the root veggies and freeze, then add stock and whizz for soup. My freezer space is exceedingly tight at the best of times as I am always filling it!

  • i store all my root veggies in my shed (cool and frost free) - they will keep lovely to at least spring.

    spuds are kept in boxes and sacks - where no light can get in but air can.
    i store carrots, parsnips and beetroot etc in tubs / buckets of sand - so no light or air can get to them - and they will keep for months and months and be as fresh and as crisp as the day i dug them out of the ground

    i prefer to have my veg fresh if i can so only freeze it if there is no other option ;)

    not sure if that would work with shop bought veg as it does tend to be "treated"
    saving money by growing my own - much of which gets drunk

    Sweet potato doesn't store very well in a cupboard/ fridge - it rots reasonably quickly. I cook it and mash it/ puree it and freeze it for use on top of cottage pie or to be mixed with parsnips and carrots at a later date for sweet root mash
