This morning I decided to make a curry and my recipe called for coconut milk. Went to get my sachets and horrified to see they had expired in April!! - have a can of coconut milk in the cupboard - could I use a small amount of this as a substitute or am i going to have to nip out? Many thanks

Does the expired stuff look, smell and taste ok? If so, it is probably fine to use! For stuff that can be stored for years, a few months out of date is usually not a problem - it is when it is years out that I am more cautious!Trust me - I'm NOT a doctor!0

The stuff in the sachets is pretty solid, yes? If I'm thinking of the same stuff, I had a solid block of it, opened, and carved chunks off every so often for maybe a year, so I'd say it keeps pretty well!
If you're not happy, use coconut milk but think of it as a much more dilute version - literally like using dairy milk instead of cream - so use more of it and reduce other liquids if possible"She who asks is a fool once. She who never asks is a fool forever"
