    Hi Wayne

Yes that would work well. Make sure you put a slit in the top to let the steam out. If the scouse is very liquid you might want to thicken it a bit or take some liquid out to use as gravy. Hope it turns out ok!

Suet pastry always works better than shortcrust if the filling is a bit on the liquid side - you get the dumpling effect......drool :D

Must be winter - I made dumplings as a result of a thread last week and now I'm thinking about suet pastry pie. OP - that would work fine.

thanks for that mrs chip.never thought about the liquid.
  • Made a veggie suet crust topped mixed veg/lentil/bean stew for the inlaws last weekend - their eyes lit up! I stuck the pastry on the stew and put the pyrex lid back on the casserole. Baked like that for about 20 mins, then I took the lid off for about 10 mins. The stew was quite runny but the pastry gobbled most of the 'gravy' up. Oh, I also added a dollop of homemade pesto to the pastry mix with a handful of grated parmesan, very yummy!

to answer my own question - I have no idea!

I made beef and onion pie filling earlier on today, intending to make my usual shortcrust pastry top. then realised I didn't have any butter! (used the last four ounces for cakes with GS yesterday.
panic - looked in cupboard for inspiration and spied the suet - dumplings I thought first - then 'suet pastry'!!!!!!!! haven't made it in years!
checked the recipe (it was on the pack) and yes its half suet to flour and a pinch of salt) easy peasy! no rubbing in. took less than five minutes to make, roll out, cover the pie and brush with milk (no eggs - used those on cakes too:().
oh wow - delish! why don't I make it more often? (OH asked that too).

exactly!! and there are no additives, it's a natural product like butter. (unless you have the vegetarian suet)
