re: appealing against the current written warning
try to concentrate on just that. ie. what is the reason/s they disciplined you?
then provide evidence to support you in that their claim/s are unfounded.
they must have produced written evidence of this (ie. actual emails, witness statements etc) and you now need to see all of this to prepare for your appeal hearing.
check that all evidence appears to be correctly dated and signed (eg. not written/signed after the preliminary hearing etc).
the tape of your original hearing is just to assist you with the previous preceedings.
after this matter is resolved, then you could take up a grievance. but if this current matter is resolved, i would personally advise against the grievance as that manager has left. you or your referees may also have to tell future employers about grievances etc.

Obviously, i still wish to appeal - what should i say to gthis person in the email, just resend the letter?

Why not just drop it as by now the manager causing you stress has now left - is that right?
