The frozen spinach is great. I have worked out a fab 'creamed' spinach recipe that everyone I have fed it to it likes.
Use about 2-3 frozen blocks of spinach per adult. Pop them in a large frying pan or pot with a little water (a couple of tablespoons per block) and cook until the blocks are broken down and it has heated through. At some point during cooking add a good few twists of black pepper, if you like it. You may need to add a little more water later if it starts sticking to the pan, which is fine. Rather start with too little and add more if needed. If using fresh spinach you shouldn't need to add water, as it releases a lot of water of it's own.
Add some cream cheese to the cooked spinach - for two of us I use about half a small pack of value soft cheese. Any will do, but don't waste real Philly unless it needs using up! Stir over a low or medium heat until the cream cheese is melted and well mixed with the spinach. You can add a little splash of cream too if you are feeling REALLY decadent! This can keep warm on the lowest setting (stir occasionally) for a few minutes while you sort out the rest of the supper. Goes really well with bangers and mash.

I'd be tempted to try making a soup with frozen spinach. Just use stock, onion, possibly garlic, flavour with nutmeg and pepper, and stir in some cream if you like.
Soups are off in our house at the moment as my nice 600w blender started making a horrible screeching noise the other week and needs replacing :rotfl:0 -
I get two bags of spinach a week from my local veggie man and use quite a few recipes:
1. Spinach and almond canelloni my daughter's favourite (chopped onion and pepper, add washed shredded spinach, then add ground alomonds and grated nutmeg; pre-cook canelloni as its bigger that way and stuff with spinach mixture; lay on a bed of tomato sauce and cover with pine nuts and grated cheese.
2. Spinach and potatoes: precooked potatoes, sliced onions and garlic, cumin coriander and ginger wilt spinach in with them and serve with brown rice
3. Spinach gratin - sliced potatoe with milk and cream, partly cook and add shredded spinach, pine nuts and cheese and finish off under grill
4. Spinach and canellini bean burgers
5. Spinach and lentils with ginger. lemon. chili and fresh coriander served with couscous
6. Spinach, onion, feta and pine nuts wrapped in filo and baked
I discovered all these because I don't like spinach but the rest of the family do and I wanted to find ways I would like it. Also, my iron levels have gone up since we started consuming two bags a week!Jan 2012: CC £2,340.30, 2nd mortgage £22,932, Mortgage £57,5380
