Cake Advice - any Expert Cake Makers about?

I am hoping there is an expert cake maker on this board!

I am going to making my own wedding cake, and am having a dry run at Christmas. I want to use good quality products, and I have the cake bit sorted, but am unsure about the icing and marzipan. Does anyone know any good quality stuff? What do the professionals use?

    sorry - i can't help you, but i managed to find a cake maker to make the cake for cost price of the ingredients, and a professional photo of the cake! so that she can build her wedding portfolio - i've since seen 2 other offers like this, local to me - but through weddingy contact pages on facebook....

    Just an idea - but if you do go down the self bake, i wish you the very best of uck with it xxx

  • There's a thread called home made cakes thread 2. People there should be able to help a bit more then I can. I've not tried to marzipan anything yet, but I've used both Regalice fondant and own brands from supermarkets. I've not found a major differance. Some cakey people prefer one over the other.
    If you are going for a white cake, then you wouldn't have a problem with supermarket own brands. If you wanted to get richer colours (brown, black and red for example) you may find buying ready coloured fondant alot easier!

    I would go for it, but my OH wants to let his sister make the cake topper type things. N it's something I don't really care about so thought I would let him have it! :p

    If I do fruit cake (which I have made previous xmas's) I can do it months before, so it should be ok. (ie enough time to sort out a plan B!)

    Making wedding cakes is harder than you think, it is time consuming, but it will be worth it in the end! If you have any places where they make cakes and have shops you may find they will sell you some stuff.

    Practice really makes perfect and if you want any advice then ask. I have made a few for friends etc so have picked up some tips along the way!

    Thanks guys. Previously I have not fed the cake, which I will do this Xmas, but have soaked the fruit. This has usually made it moist enough- and very yummy. :) however, I have just used cheap marzipan n icing, n I really think I should use better quality stuff.

    SiL2B is making the people, (she is very good at it), but now need to hire a rectangular cake tin. Can u hire from almost any cake shop, or is it only a few who will do it?

    our local market they have cake acessories stall and they hire cake tins, be worth looking at your market first, if they don't they should be able to send u in the right direction. xx
