Apple and chilli jelly

I have spent the last hour making half a dozen jars of gorgeous tasting apple and chilli jelly - first time I've done this.

However, all the little bits of chilli are sitting at the top of the jars rather than 'floating, jewel-like' (according to the book:D) through the jelly.

What have I done wrong and can I do anything to put it right?

I feel silly giving apple and chilli jelly as Xmas gifts when all you can see, until you take the lid off, is apple jelly:o

    Has it definitely set? What temperature did you boil it to?

    If this happened to me, what I would probably do is take it back out of the jars and into the pan, boil it back up again, put it back into the jars and then keep turning them upside down every so often until they were completely set, which should (hopefully) redistribute the chilli bits throughout the jelly.

    Apple and chilli jelly sounds gorgeous by the way, I might have to try that one :)
  • You have put it in the jar when the mixture was too hot.
    You can re-boil it, let it cool a bit, then pour it into clean, warm jars.

    Fiona of cottage small holder recommends turning the jars every 5 mins until its set as well.

    Have to say that sounds amazing, I make chutney for presents but might take a swing at this as well.

    I've washed up the preserving pan and can't be faffed to dig it out of the cupboard again:o
