Can I eat last nights vegetable risotto? It has been stored in the fridge overnight.
If I can eat eat, should i microwave it, or should I cook it on the hob with more stock?

yeah course you can eat it, i eat it upto 3 or 4 days later and im fine! (although thats prpbaly debatable!)
If you find its too thick when microwaved then you can always add a bit more stock to it and warm through, enjoy!Northern bird on the loose!

How long did you wait before putting it in the fridge? Ideally you should put it in there as soon as its cold, prefereably within 2 hours of it being cooked.
I would personally eat it as long as it hadn't been left in the warm to long before going in the fridge. And to cook I'd simply heat it however I felt it'd turn out best. Generally, food thoroughly cooked, cooled quickly and refridgerated can be stored up to three days. This applies to most left-overs.
I would moisten with some additional water or stock and reheat in the micro, covered so that it doesn't become too dry. IME rissotto is never as nice second time arround but still ok if your hungry!Life's a beach! Take your shoes off and feel the sand between your toes.0 -
Thankyou!! It was left out for about 2 hours, not a long time, and then it has been in the fridge since about 9pm last night.
I'm thinking its lunchtime soon!
EDIT - Math, I am hungry and skint so i don't care what it tastes like. TBH I'm not really a fan of risotto, but I had the rice in the cupboard!0 -
I make "risotto cakes": mix them with something to hold them together (if necessary, of course) and slowly fry them in some oil and/or butter. Very tasty!0

Just make sure its well cooked, hot and heated all the way through - you shouldnt have any probs if it is!!!0

Do make sure it was cooled quickly.
Cooked rice can give you a really nasty form of food posioning. The bacterium produces a toxin which is what makes you ill and unfortunately this toxin is not destroyed by heating.
I am always very wary of reheated rice and if I plan to make a rice salad I will cool it as fast as possible under cold running water rather than let it cool to room temperature.0 -

I find you don't need to mix it with anything though. Just take handfuls of cold risotto, form into small patties then egg and breadcrumb and shallow fry in olive oil and butter. They are delicious. To make them even more delicious, try inserting a small piece of cheese (mozzarella is good) into the centre of the cake.
