Sweet and Sour King Prawns

Hi all,
I'm looking to impress my partner by taking the lead in the kitchen and spicing up our menu! One thing I'd love to try and make is our favourite takeaway meal: Sweet and sour king prawns, with spring rolls and prawn crackers... the MSE way!
No matter how many google searches I try, there are too many variations and they don't quite match up to our budget and wondered if any of you lovely folks have any tips on cooking this kind of food?
I like the batter for the sweet and sour king prawns to be quite fluffy rather than crisp, but not sure how to achieve this? Any pointers at all would be appreciated, thank youu

If you can get hold of a copy of The Takeaway Secret by Kenny McGovern, there are great recipes for pancake rolls and a sweet and sour chicken recipe that could be adapted for prawns - I made the chicken version last week and it was lovely, very chinese takeaway authentic and very easy. I think it's in The Works bookshops for £1.99 still, or on Amazon for £3.69.
