I am the only vegan in my house so know what it's like having several different meals on the go!!!
Must admit though, most of my family eat vegan most of the time as they can't be bothered to cook for themselves!!:rotfl::rotfl:
I have liberated a marrow soup base from the freezer for today...I will make some bread to go with it and add some lentils to bulk it out a bit.....made it in the summer so just goes to prove how much I have in at the moment!!
Tomorrow, I am going to have tortillas with some vegan mince which I have in the freezer and will add some chipotle chilli to it, half a pouch of salsa that is in the fridge, some lettuce and some vegan yoghurt and mint dip....nomnomnom!!:D
I have started the 'don't throw food away' challenge for 2013 (https://forums.moneysavingexpert.com/discussion/4366653 ) and am aiming for no more that £5 worth in a month....actually going for no food waste, but will give myself a little leeway until I am used to it again!!! I'm the only vegan in my house, the rest class themselves as vegetarian, but I only ever cook vegan food. In fact I don't think I have any animal produce in the house at all these days. Everyone was happy to stop eating eggs ages ago (all think they are nasty mucous-y and revolting), and now that I've found the Sheese sold in Tesco even DH is happy to eat that rather than the cow juice stuff, which he was eating far too much off (he could polish off a 500g block in a week on his own. No wonder he was a bit of a bloater;)). They don't class themselves as vegan though because they will eat milk chocolate outside the house (I only ever buy Tesco Value plain :rotfl: which they all like anyway)0 -
tesco's value ketchup and oaktree vegetable soup, certain pot noodles (not all) are vegan friendly as are tesco's own brand jammy dodgers - and mcvities hob nobs too.
All the major supermarkets have their own brand frozen soya mince which usually comes in at 2 packs for £3 is a great thing to have in the freezer for all sorts of things.
Homepride chilli sauce is good and lloyd grossman pasta sauces (often on special offer at 1 of the main supermarkets - too pricy otherwise) both good fall backs when not wanting to start from scratch.
If you have one near you or go near one go into a chinese super market and get tofu products there, lots more variety and a lot cheaper than elsewhere also look out of t tins of mock chicken duck etc, turquise colour £1 something but very good for vegan store cupboard so worth stocking up.I am responsible me, myself and I alone I am not the keeper others thoughts and words.0 -

Tinned chickpeas
Packet split red lentils
Bulgar wheat
I am new to all this and following the 'overcoming Multiple sclerosis' diet which is vegan based,although fish is allowed and very low sat fat. I do not intend to eat much fish and will take an Omega 3 supplement.
I am hopping I will be able to lose weight, as I have put on over 3 stone in the last 6 months, due to being immobile and on medication. I am hoping the diet will mean I can come off the medication in time.0 -
Applepad - maybe get kidney beans, mixed beans, tinned sweetcorn, wholemeal/ white pasta, basmati/normal rice, porridge oats, quinoa and couscous. Couscous is very easy to cook as you just add boiling water. I get tinned green lentils for quick and easy salads or to add to curries too.:)
I saw on the Tesco vegan list that the Tesco brand canned ready meals vegetable chili and the chickpea dhal are vegan. Only about 40% cocoa solids too which I prefer - I don't like the very dark 70% plus chocolates. Far too bitter for me. Plus it's only 30p a bar. What's not to like? I always have a few bars in 'for baking' but it mostly goes straight into mouths without going anywhere near any chocolate cupcakes at all :rotfl:0 -
Great thread Icontinuetodream! My daughter (adult, doesn't live at home) is vegan and this has give me inspiration for when she is round.

Newly vegan (vegetarian since April). Currently on day 3 of a juice fast, & looking forward to trying lots of yummy vegan recipes. Is it better to buy tinned or dried pulses, for chillies & stews?0 -
I recently bought coconut oil... was interested to know what I can use it for in cooking? Going to use it as a moisturiser as well!0
