Options
Hi in the middle of making a lamb stew and realised I am out of potatoes but I had put some uncooked new baby potatoes in the freezer so I hoped they might save the day well I put them into the microwave to defrost and now they are soft to the touch I cut them open and they look ok but the flesh of the potato is soft so are they safe to eat and could they ruin my stew. Thanks

I always cook small potatoes in the microwave. I wouldn't add them to your stew if they are already soft. Just eat them along side. What's the worst that can happen?;)

If they were blanched before freezing then they will be ok to use, if they are absolutely raw (as opposed to not completely cooked) then I'm afraid that you shouldn't use them as they will probably taste sweetish and weird and might blacken. (This is why you can't leave potatoes in the ground over winter like you can parsnips)

On the other hand if they taste ok to you then go for it, but I'd probably do some rice or bread instead.

I agree with Seakay - If you plan to freeze potatoes again, cook them first.

Mashed potato freezes well too, as do baked/jacket potatoes or even roasties :)
