Sweet Potato Ideas

I have a couple of sweet potatoes in the fridge, that I don't want to go to waste, I also have some carrots, red onions, potatoes, red lentils, what can I do with all of this please? I don't often cook with sweet potato, need some inspiration, any ideas HAVE to be no added fat, I have some quorn mince too.

    I've often eaten sweet potato baked in the microwave - just bake like an ordinary potato (but for less time) and scoop out the flesh. Really delicious with fish cakes!

    Edit: I love sweet potato especially because it's so rich and unlike ordinary potato doesn't need butter or sauces to make it less dry.

    Oh sweet potatoes and marshmallows! This is a Thanksgiving/Christmas special in our house.

    I nuke them for speed, then scoop out the middles and mash them, put them in an oven proof dish, sprinkle on a bit of sugar and then cover the top with mini marshmallows and bake them until the marshmallows brown. Everyone in my house would sell a kidney for these, lol

    Make sweet potato wedges. Slice the potatoes into wedges, put skin-side down onto a baking tray, and bake in a pre-heated oven at GM6 /200C for 40-45 minutes. Serve with sweet chilli dipping sauce. Or, if you don't have a sauce to dip into, sprinkle on some herbs or paprika before baking the wedges to add another flavour. A lot of recipes for sweet potato wedges say that you have to cover them in oil before baking, but you don't.
    Enjoy the little things, for one day you may look back and realize they were the big things.

    Another idea is to make soup with them and the other ingredients as long as you have some vegetable stock cubes. Chop all of the veg, bring to the boil in some stock for 20 minutes, and blitz until smooth. You could add some curry powder to give it a kick, as this takes away some of the sweetness too.
