My daughter needs to make an italian meal for food tech. Any one got any ideas for a quick meal for around a fiver max. Thanks.

Paella is Spanish, but if it needs to be rice based then she could make a risotto - that is really easy - just fry a chopped onion in some butter, add a little bit of chopped bacon, some chopped mushrooms and about a mug full of dry risotto rice. Then stir in two mug fulls of vegetable stock (made with cubes) until the rice has absorbed the liquid and then stir in some more butter, salt and pepper and some parmesan cheese. Or maybe she could make a lasagne - just fry some mince with a chopped onion, some chopped peppers and mushrooms, a pinch of italian seasoning or mixed herbs, add a tin of chopped tomatoes, fill the empty tin with water and add that, about two tbs of tomato ketchup, two beef oxos and simmer for about an hour. Make a white sauce with 2oz flour, 1.5 pints semi skimmed milk, a knob of butter and salt and pepper. Just put everything in a pan and whisk till the flour dissolves and then heat until it thickens. Add about 2oz grated cheddar. Then take some lasagne sheets and layer them up in a square dish with mince and sauce and finish with a layer of sauce. Sprinkle with grated cheddar (about two ounces) and the same of grated parmesan cheese and bake for about 40 minutes at gas 5. Or if that sounds too faffy just make the mince sauce and pour it on to boiled spaghetti for spaghetti bolognaise and sprinkle with parmesan.Jane
