Cabbages and Cauliflowers - Help.

Not about growing but storing, earlier this week my local greengrocer were doing 3 for £2 on all cabages etc. Well I couldn't resist and bought a cauli, savoy and red cabbage, choosing the largest possible of course.
I live on my own and so far this week have been peeling the leaves of as when needed, and putting in the fridge, I'm worried that this will effect the taste though, is there a better way I can store them, should I discard the hearts, blanch the leaves etc. Oh and the cauli, I've just broken this up and submerged in cold water like I do peeled spuds will this do the job?
Ooo and another one how do I keep my cabbage red - it's going purple!! Any lovely recipes would also be nice. Thanks - I look forward to your help.
