I've got half a pot of veggie stew left over from last night and it has really thinkened up nicely for tonight (from the macaroni probably).
OH is stuck on the motorway so won't be in until about 18:30 so I've got a bit of extra time - anyone got any suggestions about how to make it easily into a baked meal instead of a stew? Don't think dumplings are an option unless I wet it down a bit.
Is there a topping - other than mashed potato that might be hearty now it's turned cold? I've just gone blank on ideas and recipes.

What about a cobbler, made with a plain/savoury or cheese scone. Its ages since I made one but there would be recipes on T'internet.
or even a savoury crumble - again I dont have a recipe to hand I usually do a search.

Just make your dumpling mix but instead of forming into individual dumplings use it to top your stew mix (which you have put in a deep dish ) just roll it out quite thick and cover the stew , I do this quite often with stewed steak/or mince and veg , we call it Teviot Pie... its delicious as the suet crust pastry goes crispy and brown on top...#6 of the SKI-ers Club :j

Ooh, this is interesting - what recipe do you use for the suet crust?
I can probably afford to have a suet pastry as I've just got my thick woolies out so that should hide the extra lumps and bumps :rotfl:.

Another idea is thinly sliced potatoes, layered on top of the veg stew, sprinkle a bit of garlic salt on, then top with cheese. Bake for around 45 min I guess? (I never check timings for some reason)Proud to be dealing with my debts :T

I use half suet to SR flour mix in enough water to bind & roll it out a bit then wack on top.0 -

Wow.... thanks for all your help, there were some great ideas.
We are now all sitting in front of the telly with very full bellies - I decided to go with smashed potatoes (not mashed, just boiled and then roughly bashed) on top with some onion and garlic. Baked it until the potatoes got brown and the rough edges went crispy.
Next time, I'm going for the suet pastry topping and will definitely have to research a savoury crumble topping recipe.
By the way, Morrisons have stew packs at half price at the moment - 50p for each pack with has 1x swede, 1x parsnip, 3 x carrots and 2x onions.
I used two packs, added a couple of potatoes, used some stock cubes, can of chopped toms,some lentils, garam masala and soy to taste - handful of small pasta bits = two nights worth of meals for about £2 - I'm happy with that!
