Cake for Diamond Wedding Party

Help! I may have to make a cake for my parents' Diamond Wedding party in the middle of November. The person I'd asked to do it backed out, so did the second choice, etc & now I'm running out of time as we go away next week! I just may be able to sort something yet, but I have a growing feeling I'll have to do it myself.

Apart from the fact I don't think I have the right sized tin, & we don't live in a town that has that kind of shop, could anyone point me in the direction of a recipe for up to 100 people to have a taste!!! I'm thinking fruit cake as we may need to post to absent relatives. I realise it should ideally have been made by now but it's just all gone wrong. I was thinking to do a square or rectangle & turn it to make a diamond, keeping it very simple as I'm not a great decorator.

Please help! I so want to get it right for them!

  • why not go and buy some fruit cakes from M&S instead of stressing about making them?

Then go to a cake decorating shop and ask their advice on suitable decorations

  • Thanks - I would if there was one of either-very little in our town! Not to worry, I think I have found someone to do it for me. Thank you for taking the time to reply though. Appreciated!
  • My parents have just celebrated their Diamond Wedding Anniversary and had a lovely cake.

As time is running out for you to bake one yourself I would suggest you buy a ready made fruit cake. The shops are full of them at the moment ready for Christmas so there will be plenty of choice and you can even get them ready-iced and then add the finishing touches yourself to make it personal. A lot of places now copy photos onto icing to go onto cakes, so how about digging out an old Wedding Photo and trying that idea?

My parent's cake was made by a relative and was totally beautiful with a picture of them on their wedding day on the top of the cake, a miniature spray of flowers and diamonds on each corner. You can also get printed ribbon to go around the cake too which makes it look gorgeous.

If you can't find a ready iced cake big enough for 100 then buy 4 un-iced and put your own marzipan and icing on - no one will ever know it's 4 separate cakes!

Have a wonderful celebration and good luck!
