Help needed today please - veggies to use up including cucumber!!!!!!!!!!!!!!!!!!!!!!

Need help cos I read old style thread but not as good at following old style methods...:o :o
So hope you don't mind helping me???

Anyway got a head of celery, half a dozen medium sized carrots, 5 largish leaks and a huge cucumber (been there a while but untouched so still feels quite firm) - can you cook cucumber?

What would you do with these veggies?

OH is not a great fan of veggies so can't do chuck them all in a pan with a stock cube type thing cos I'll end up eating it all myself until I'm sick of it !!!

If solution involves 2 or 3 recipes that's ok cos could do a couple today and another tomorrow...

  • We chuck all veg that needs using either into SC for a stew or soup, but our favourite is too put the oven on, rough chop all veg and place into oven dish. Pour over some olive oil, then sprinkle with brown sugar and cook for 20-30mins...yummy;)

    Excess cucumber I make into a Raita to use on sandwiches and as dips now,

    This does make a lot

    Cucumber peeled, seeded, and grated or chopped
    250mls plain nonfat yogurt
    1 teaspoon choipped fresh mint leaves
    1/4 teaspoon ground cumin
    One day I might be more organised...........:confused:

  • Braised celery always goes down well in my house (amazing since I don't usually like celery as a veg and DS hates carrots!). De string celery and cut into 3 inch pieces. Thinly slice 1 onion. Peel and thinly slice a few carrots. Cook the onion in a little butter for 4 mins over medium heat. Add carrots and cook for another couple of minutes. Add celery and cook for another 5 minutes or so. Season and then pour over 8 fluid ounces of hot stock (I usually use HM chicken, but a veg or chicken stock cube would do). Simmer gently for around 20 mins until almost tender. Remove lid and increase heat to medium and cook until liquid reduces and slightly syrupy (approx 5 mins). Indeed when I've poured the stock over, if the oven is on then I stick it in there to finish cooking.

    Try googling Cucumber and I'm sure you'll get some soup ideas.

    having been on a diet since jan 1st because i ate too much choccy at xmas :o i`d suggest slicing cucumber carrots and celery into sticks and sit in front of the tv munching with some humous as a dip :D
    proper prior planning prevents !!!!!! poor performance! :p

  • If you grate/slice the carrots and celery finely, you can cook them into a tomato based pasta sauce and no-one will notice them there :D

    Chop/grate them up small, also chop up an onion, then fry them until they're softened. Add a can of chopped tomatoes, some boulion powder or a vegetable stock cube and a tablespoon of tomato pure. Simmer the sauce until it reduces a to a thickness you like.

    Freezes brilliantly, low calorie and healthy mmmmm.

    On Rick Stein's programme the other night he did sauteed cucumber. Cut cucumber in half long ways de-seed and peel off the skin, chop into fairly chunky slices and saute in oil - or butter if you aren't on a diet. It only takes a minute or so he said.
    Haven't tried it myself but it did look alright. :D
    I expect you could make some sort of cucumber soup, not sure I fancy the idea though!:rotfl:

    Depends how fresh the yoghurt is I find, usually in a sealed tub I keep mine for 3/4 days.

    I had Vegetable Curry from the new Chinese up the road on Friday night - in it were all the ingredients you mentioned - including cucumber - I kid you not....
