I know there's some in the old style recipe thread but I couldn't find anything that I liked the sound of! My normal style of making soup is to boil up some veg until it's crushable, then mash it and add stock. However this time I fancy making something a bit more exotic!
Currently in my cupboard I have:
- Potatoes
- Sweet potato
- Squash
- Aubergine
- Cucumber
- Red, green and yellow peppers
- Garlic
- Red Onion
- Onion
- Tomatoes (paste, fresh and tinned)
- Carrots
- Veg and chicken stock
Any ideas? As healthy as possible please!

yummmmmmmm chop onion red onion red and yellow peppers . fry until onions are translucent but not browned. add chopped carrots,squash and some sweet potato and an ordinary potato. add water and stock cubes or liquid stock. add garlic and cumin and curry powder to taste---not too much its not curry its spicey soup!0

You could make quite a few soups out of those ingredients:
Minestrone soup
Carrot soup
Tomato soup
Sweet potato soup or carrot and sweet potato soup
Potato and roasted red pepper soup
Carrot and roasted pepper soup
The possible list from those ingredients is endless.

What about Tomato and Basil soup we love it very healthy and low in fat or red pepper and tomato with a touch of chilli to give it a bit of spice.0

I make a variation of this and it is truly delicious, and very warming
in cold weather. I have not made it with carrot juice, but started it like normal soup (i.e chop veg, saute off etc, then added chicken stock and coconut milk).Think big thoughts but relish small pleasures0 -
I vote for sweet potato! I love it when its been roasted with a bit of garlic. its also the easiest soup in the world!
roast off your sweet potatoes, at least two or three large ones if making about a pint of liquid (peeled and cut into 1 inch cubes in a hot oven with a bit of chopped garlic - one clove will do, and some olive or veg oil. high heat (gas 7 or 8 for about 35 to 40 mins.
Then you just put it in a saucepan add your chicken or veg stock, bring to boil and simmer for a few minutes, blitz with a hand blender or put in the blender carefully, taste, add salt and pepper, and its ready! you CAN add a swirl of cream or creme freche if you like!
These quantities make a fairly thick hearty soup! perfect with some crusty bread!0
