  • I actually hate Kale and don't normally get it delivered but this week it appeared in my vegetable box. However, on TV yesterday were two ideas that I thought might be quite palatable:

    1. Cook and mix in with mashed potatoe

    2. Put uncooked kale in food processor with garlic and lemon juice and mix with some oil. Use as a sauce for pasta. Sounds extremely healthy and virtuous.

    I roast beetroot in much the same way as spuds, but I don't bother peeling. Wash well, cut in half if they're big beetroot, parboil until they're tender to the tip of a knife, then roast in a hot oven, with olive oil and an onion cut into wedges. Towards the end, add a splash of balsamic or wine vinegar if you have it. They'll go all sticky and caramelised :D
    I based this on a Nigel Slater recipe, and even the beet-hating boyfriend liked it. You can also wash and saute the leaves in much the same way as spinach.
