Hi all,
I'm a bit of a lurker around these parts, and normally find everything I could ever wish by simply observing, but now comes the time for a question!
My OH is overseas at the mo and I like to send him stuff to cheer him up (and let him know I'm still functioning!). So far I've sent a couple of batches of Anzac biscuits, and later next month will be a Christmas cake, but in the meantime does anyone have ideas for biscuits that will make the journey without going stale - it tends to take just over a week. I was going to try Twink's Hobnobs, but looking at the recipe they're pretty similar to the Anzacs.
I don't have any fancy vacuum sealer - just lots of clingfilm and ziplocks.
Thanks - all ideas appreciated! xx

My other half is overseas at the mo too, when he rang me this week he said to ask his Nan to make him a fruit cake. Duh, I said I can bake and cook you know! So I've been into Sainsbury's today and bought a locally produced fruit cake, I will re-wrap it and see if he thinks I've made it! Naughty but haven't got time to make one yet.
Do you have the recipe for the Anzac biscuits? I would like to have a go.
Also Tesco had some of there Finest biscuits in tubes reduced, I wish I'd got them now as they would have been perfect to send. I'm going to look for them again.0 -
Ha ha! He'd know if I did that because it wouldn't have those "caramelised" bits ... :rotfl:
This is the recipe I used for Anzac biscuits - really easy and delicious. They got the thumbs up!

I seem to recall reading a tip years ago to pack baked goods in rice to stop them going stale. I think the rice would absorb the water in the air that would make biscuits go soft... Never tried it though. If anyone does try it, let me know how it works!Trust me - I'm NOT a doctor!0

Twinks do taste a bit different than anzacs, for a bit more variety though you can add choccy chips to the twinks mix, they last just as well and are like a choccy hobnob.Softstuff- Officially better than 0070

Thanks, I might try the recipes and leave the rice as a last resort ... although would love to see OH's face on opening up a parcel full of dry rice!0

I saw the title of this thread, and thought, perfect! I know a good biscuit that travels, the anzac biscuit! Only to read the first post and realise that I was beaten to my suggestion.
Back to the drawing board...
a quick little google came up with this website

{edit, as a newbie i am not allowed to post a link, so hopefully doing it this way will work?!?}
which looks pretty good, although I havent tried them personally.
Good luck, and I hope OH appreciates what you are doing for him!!0 -
Wow, thanks LittleMai, that was a really good link. Funnily I've been sending shop-bought shortbread, but never thought of making my own. And coconut macaroons - I've made those at home but never considered they might travel well. I'll definitely be doing a baking shop in the next day or two! I reckon I've got a few weeks worth of ideas now - he'll be coming back well fed
And yes, I think he appreciates it. He'd better!0 -
I sent those flapjacks to my friend when he served in afghanistan and they lasted wellA little nonsense now and then is relished by the wisest men
