    how about these, HIghlander Biscuits.
    I used to make them when I worked in a bakers when I left school
    Highlander Biscuits

    (4oz) butter (2oz) caster sugar (4oz) plain flour (2oz) ground rice 2-3 tbsp Demerara sugar
    Heat the oven to 190C/gas and lightly grease a baking tray
    Cream the butter and sugar together until light and fluffy.
    Add the flour and rice and mix well, knead the mixture together.
    Roll into a thick sausage, then roll in the Demerara sugar, wrap in greaseproof paper and chill in the fridge.
    Remove from the fridge and cut in slices.
    bake for 15 mins, leave for 5 mins when they come out of the oven and then cool on a wire rack.

    When I make Twinks hobnobs I bake half and open freeze the rest in biscuit sized blobs (I use a tbsp size measuring spoon so they're nice and even), then bag up. These bake really nicely from frozen.
