Freezing filled pasta?

Can any one help me?

My wonderful husband is home for the weekend having been in Italy for a couple of days, and has come home with some filled pasta. He's italian and I've lived there, but never froze pasta...I know some old stylers do, and frozen meals of pasta exist, and i have seen some frozen ravioli or similar at Waitrose.

can all of these be frozen?

beef and cheese and spinach and veg

pumpkin and potato and cheese

basil and pinenuts and ricotta

ricotta, spinach and walnuts

pistachio and artichoke (sounds especially yum!)

spech and radicchio

we don't have filled paste all that often, and when we do its fresh, so not sure about these?

If nothing else I think some of the combinations sound nice and like good inspiration!

I always freeze the filled fresh pasta from the shops so should be fine. I also then cook them from frozen...

Perhaps travel cannot prevent bigotry. But by demonstrating that all people cry, laugh, eat, worry and die, it introduces the idea that if we try to understand each other, we may even become friends.

No you definitely can't freeze them, you need to send them all to me to eat :p Joking aside, they sound DELICIOUS!! and you can freeze them. If you're concerned about how well they'll freeze, try freezing a few cooked and few uncooked pieces tonight then eat them tomorrow and see how they taste.

Are they large like giant ravioli with chunky fillings? Or small with pureed fillings? I'm only curious as i'm getting recipe inspiration :D

Not sure yet, IME most tend to be roughly pureed. :) They are all normal sized small ones, some tortellini some ravioli. :) They are nice inspiration aren't they? My favorite filled pasta though is a very stodgy sardinian pasta, the same shape as Japenese gyoza and filled with mashed potato and mint (purreed)...sometimes with a little cheese like pecorino. These are usually served with a much fresher tomato sauce, or I've had them with butter and sage over the top too. They are very serious comfort food, incredibly filling and.....inexpensive to make I imagine. TBH, I've only bought them, but have been thinking of making them. I make filled pasta rarely compared to other meals, but love them in a little light broth with shaved cheese (pasta in brodo).....heaven...and much lighter on calories than a traditional sauce :)

Just out of interest have you spotted the filled Pasta at Aldi. They have fresh ones in the fridge, and some which are "long-life" in sealed packets. Sorry we don't eat them, but DS & GF do, so I get them for them.
