simple an cheap veg soup

Options
take mixure off veg i tend to use mostl;y root veg
carrots
swead
parsnip
celariac
onion
garlic
leek
potatoes(sweet pot also works with this)

basicly what ever veg takes ya fancie an as much as you want of each
ive not tried it with any green veg though

also need veg cubes i use 4 an i make this soup enough for 3-4 people

ok its all siomple really chop it all up an throw it all in a pan
add the stock an boil for arround 1/2 hour

now depending on how u prefere your soup u can either blend it or as i do get the potatoe masher an mash it up not loads but just enough so that you do still have a few chunks of veg

lots of pepper an a bit of salt an hey presto

just incase this doesnt fill u up tho u can also add chicken an just change the veg stock to chicken or use both

if your a veggie an this doesnt fill you up add some lentles

its soooo scummy an healthy an easy u can make it the night b4 if your working an pop it in fridge

oh one more thing dont forget the crusty bread.....:j

  • I make a very similar soup and I agree, it is very healthy and tasty.

    I usually add a little bit of curry powder to mine, along with the veg stock (I use Kallo organic stock powder) then I blend it with a dash of single cream, although that depends if I've got cream in, it's not essential.

    I might try your potato mashing method for a heartier soup.

    I absolutely love home made soup, its so easy and healthy too. My recipe is very similar to yours loopy, but I use whatever pulses we have in, and bouillon as well. I'm lucky that the rest of the family love home made soup too, so in the winter I can make this every week and never get any complaints.

  • i think you can put anythin with in reason in to a soup
    i love to experiment
    i have added chinese noodles and the small dried pasta to it as well
    only because ive had them in the cubourd an was going to throw them out...lol
    i like the curry powder idea tho may give that a try next time i cook it
    i wander what other herbie things i have on the shelf
    *goes away to rout an concoct...hehe*
