Good filling meal for 4.

Ive stolen loads of lovely recipes from this forum so thought it was time to give something back.

My family all love this dish and its not that exspensive to make and its very filling.

Its called Italien rustic chicken. Serves 4

Ingredients

3 Chicken breats cubed
1 large onion
5 garlic gloves ( more or less depending on how much garlic you like)
5 rashers smoked back bacon choped up into small pieces
Few sprigs of fresh rosemary or a dessert spoon dried if you haven't got any.
1 bag of new potatoes ( amount you would normally use to feed 4)
1 large glass white wine
Splash olive oil
Butter
Salt
Pepper

Method
1. Boil the bag of potatoes till cooked then leave in cold water to stop them cooking.
2. Chop up the onion, garlic, bacon, chicken and rosemary.
3. Put a little oil in a pan i use a wok.
4. Fry the onions and garlic till the onion softens.
5. Add the chicken and fry of till its nearly cooked you may need to add some more oil.
6. Add the bacon and rosemary, cook till the bacon is cooked. Season with salt and pepper.
7. Drain the potatoes and add them and the large glass of white wine to the pan.
8. Cover and cook for a further 10 mins add a lump of butter if you like the sauce to thicken.

Try to keep everything moving in the pan all the time apart from the last 10 mins.

Serve with fresh bread, french stick or ciabatta.

Good filling meal for 4 which can be done for less than £5

    Wendyl1967, I have found that my son will eat any kind of soup as long as he can have grated cheese in it!!
    Just made a big pan of leek and potato. OH has a heavy cold so I have told him it will warm the cockles of his heart when he comes home tomorrow evening after a week in his lorry, and I can give him soup!! I think he is now surfing the net, trying to find some kind of translation for "cockles of your heart" as he is Belgian!!
