I haven't been able to get any rice pudding rice for weeks (is there a shortage? Is it a secret?
) so thought I would give tapoica a whirl instead, I remember having it as a child but have never made it myself before now.
I followed the directions & quantities on the packet
Soak in milk for 1 hour
bring to boil
simmer for 1 hour
add sugar/butter/vanilla & serve
It all started to go wrong around the simmer for 1 hour instruction, after 20 minutes it had boiled over twice even though I had the gas down as low as possible, was sticking to the bottom of the saucepan & even though I topped up the milk it was done in well under half an hour. It has a terrible burnt taste to it from where it stuck to the bottom of the pan.
What did I do wrong & can I rescue it?

i do mine in the micro and this is what it says on my box, whitworths,
based on a 650 watt micro
place 50g tapioca and 1 pt milk, semi skimmed in a 3 pint bowl, cook full power for approx 12 mins, stirring every 3 mins, remove from micro add 1 oz sugar, stir well leave to stand 2 mins and serve
additional stirring would be beneficial it says, i use a small whisk and stir often to begin with0
