Veg curry recipie.....

Options
I have yellow split peas, red lentils, courgettes, carrots, potatoes, leeks, peppers, garlic, coriander and paprika. Also coconut milk.

I'd like to do a curry, but I need some tips on method.

    Courgette curry


    preparation 10 mins, cooking time approx 15 mins.

    * 1 1/2 tbspns oil
    * 1 tsp cumin seeds
    * 225g/8oz courgettes, sliced into 5mm rounds
    * 1/2 tsp chilli powder
    * 1 tsp ground coriander
    * 1/4 tsp turmeric powder
    * 400g canned tomatoes, choopped
    * salt to taste
    * 1 green chilli, chopped
    * 1 sprig coriander leaves, chopped

    1. Heat the oil and add the cumin seeds.
    When they crackle, add the courgette slices.

    2. Stir and sprinkle with the chilli, coriander and turmeric powder(s).

    3. Mix well and add the tomatoes.
    Sprinkle with salt, the green chilli and fresh coriander.

    4. Cover and cook for 10-12 mins.

    Has anyone got a good recipe for veg curry, got loads to use up and forgot to get meat out for tea I havent got much imagination on meals without meat:confused:

    I never add meat to curry, we always have veggie at Chez MATH. The veggies change depending what I have to use up.

    This is roughly what I do:

    Soften off some sliced onion in a skillet with a little oil

    Chuck in some sliced red/yellow/green bell peppers, sliced onions, sliced courgette and saute until coloured

    Add a tin of chopped toms and a jar of shop-bought or HM curry sauce

    Simmer until veggies are soft

    Serve with rice and naan

    This is the recipe I use for my DH and DS.

    Fry diced onion then add half tsp ginger and 1 clove of garlic.
    Add 1tsp curry powder.
    Cook for a couple of mins then add squash/potatoes/mushrooms and coat in mix. Add small tin of tomaotes, 50g red lentils, 200ml coclnut milk and 125ml veg stock. Bring to the boil and then simmer for 25 mins. Serve with rice and naan bread. I've never eaten it, but they have and it's a 'clean plate' meal each time.

  • Anyone have any easy veggie chilli/curry recipees that do not require too many ingredients.

    Hiya

    try:-

    Fry off some onions with a little garlic until soft.
    Add a chopped up baking apple (optional) and fry until it goes mushy
    For curry:-Add a teaspoon and a half of curry powder, or a tablespoon of curry paste
    For chilli:- add a splodge of worcester sauce and a half teaspoon of chilli powder
    Add some mushrooms, peppers, and about half a pound of chopped up mixed veg (you can use frozen ones if you want)
    Add a tin of chopped tomatoes
    Add a good squirt of tomato puree
    Simmer until the veg are cooked et voila!

    Not very authentic I guess but very quick, very easy, very tasty!

    I do a 'quickie' chilli sometimes from tins.:D
    Soften an onion and a bit of garlic if you like it, add a tin of chopped tomatoes, tin of carrots, tin of chilli beans and a tin of butterbeans, you can also chuck in some sweetcorn if you like.
    Simmer for about 10 minutes and serve with rice or garlic bread.
    If you don't have chilli beans you can use kidney beans and a tin of baked beans adding chilli to taste.
    It makes a huge pan full which serves 4 easily.
