I freeze sausages and they have always been fine. :D

As when using any frozen meat - let it defrost properly before using and don't keep hidden in the freezer forever!!!

extra tip - if there are a lot, i portion them up and freeze seperately so that i don't have to defrost and use 10 sausages at once.

I often buy sausages when I see them on special offer.......portion them up and keep them in the freezer. As r.mac says make sure they are completely defrosted before cooking.

Why do such things always say 'freeze on day of purchase'?

What's the problem with buying today, keeping them in my fridge for a few days, then freezing. Is it simply that in the few hours between the time of purchase and them reaching my fridge the bacteria will have started to multiply?

    Thanks

I think the reaon is the quality of frozen foods is only as good as the quality of the food before you freeze it. Once you have taken it out of the chilled cabinet in the shop, it inevitably starts to degrade. It's in your trolley, then in your car, before being put away into your own fridge at home.

Many people's fridges aren't optimal. Even if yours is, the food is still continuing to age while its in there. So if you wait until the last moment before you freeze it, it just won't be as good quality (even if its still OK) as it would have been if you had frozen it as soon as you got it home.

    Hope that makes sense?

I always freeze sausages. DH bought 3 yellow stickered packs before Christmas as they were less than half price. Unfortunately he froze them before they could be portioned. However I have discovered 2 different (but similar) brute force ways to separate them! First drop from height a couple of times onto outside concrete slabs. Or using wooden meat mallet, whack pack a couple of times. I have found both ways work really well and didn't damage the sausages. Remaining sausages then portioned, bagged and back into the freezer.

i often buy sausages and freeze i only like certain ones. but my local butchers say do not freeze sausages. because they have already been frozen once. so it might be worth checking next time ur at farmers market if it is ok.

If they haven't been previously frozen will be fine, some places and people who do farmers markets do freeze them I have found so would ask next time you go. You can cook then freeze previoulsy frozen.
One day I might be more organised...........
