Bit of a pickle!

Hi All, I am having the old uni girls over for dinner and I need ideas for what to cook. Unfortunately there are a few fussy eaters so my normal ideas are out the window. Would be great if I could do one meal everyone could eat. It needs to be vegetarian (1 friend), no mushrooms or cheese (allergies and who doesn’t like cheese!) and no tomatoes (allergies) as well as being low carb for those girls always worrying about weight!!

Any ideas?!?!

  • Just made a lovely shepherd's pie to-night with veggie mince (low Carb , onions and spices, topped with cauliflower and turnip mash. There are some great recipes on the first post of the low carb thread. Good luck.

  • What about fajita wraps???, loads of different veg you can use plus a separate dish of chicken for the meat eaters.

    Plus easy to make and fun to eat.

  • thanks everyone. I think i am going to go for the fajita idea as can mix and match and yummy and no tomato (which is the thing i cant eat)!

    Fajitas is a good choice, it means everyone is catered for and having the same meal so to speak. No need to put mushrooms in though.

    Mushrooms SHOULD NOT be put in fajitas anyway!!! :)
