Can you cook it like chorizo? If it's sliced I'd either put it in a sandwich or pop it on a pizza0

Use it to top a homemade pizza or add it to a pasta sauce. Any leftover will freeze well for next time.

I freeze the sliced packs, but if I have some that has to be used up quick I use it in pasta dishes (slice and warm through in a pan before tossing with pasta, or cook in pasta sauce).
Another great use for odds and ends of pepperoni or salami is to add a cut-up slice or two to tins of baked beans/baked beans and sausages. The flavour is gorgeous.I believe in the freedom of spinach and the right to arm bears.
