can I make broc/cauli cheese today for sunday?

Pretty much as the title-do you reckon I can do that and keep in the fridge or should I freeze it?

TBH it would be far better made fresh. Cooked cauliflower and broccoli can both go a bit mushy and watery in the freezer and cheese sauce can go rubbery. Not a good combination! And if you keep it in the fridge it will go a bit stale over that length of time. The furthest in advance I'd make cauli cheese is the day before, and even then it still wouldn't be as nice.Val.0

I do often freeze it, and it turns out ok (not as nice as fresh but I love cauli cheese so much that I make a load on it in one go
. It's just I don't have vast amounts of space in the freezer at the moment, so if I could keep it out I would, but will try and squeeze it in

You'd do better to hang onto the veg and make it fresh, or freeze the veg if you don't think they'll keep that long, and just make the cheese sauce on Sunday using the frozen veg.0

Personally I would make it fresh on Sunday or if you really can't then make it now and freeze it.0
